ROASTED GARLIC OVEN BRAISED VEGETABLES
Ingredients
1 cup Annie's Naturals Roasted Garlic Vinaigrette
2 large onions
3 zucchini
1 leek, cleaned
2 sweet potatoes
1 fennel bulb
3 carrots
Rosemary
Salt & pepper (to taste)
Preparation
1. Chop all vegetables into 1" pieces.
2. Marinate for 30 minutes or longer in Annie's Naturals Roasted Garlic Vinaigrette.
3. Season with fresh rosemary, salt and pepper.
4. Place in foil and grill on high for 20-30 minutes until potatoes are cooked al dente. (Or bake in a Pyrex dish for 20-30 minutes in a 400° pre-heated oven.)
5. Serve and enjoy!
