PUMPKIN SEED, SHITAKE AND GOAT FETA SALAD

Ingredients

  • 4 cups baby greens
  • 1 shredded beet
  • 1 medium carrot, shredded
  • 1/2 ripe avocado
  • sliced 1/4 red bell pepper
  • finely sliced 1/2 cups raw shelled pumpkin seeds
  • 1/4 cup goat feta cheese
  • 1/3 cup Annie's Shitake Sesame Dressing

Preparation
Place baby greens on plates. Peel, slice and shred toppings. Place on salad. Top with feta cheese and pumpkin seeds and drizzle with Annie's Shitake Sesame Dressing.
