NO-COOK PASTA SAUCE

Ingredients

  • 2 lbs. vine-ripened tomatoes, peeled, seeded, and chopped
  • 2 tbsp. minced shallots
  • 1 tbsp. crushed garlic
  • 1/3 cup finely chopped Italian parsley
  • Juice of 1 lemon (approx ¼ cup)
  • 1 8-oz bottle Annie’s Naturals Dipping Oil
  • Salt and freshly ground pepper to taste

Preparation

1. Mix together all ingredients.

2. Let rest at room temperature for 15-30 minutes.

3. Serve with your favorite Annie’s Pasta, minus the cheese sauce!
