MARINATED ARTICHOKE SALAD
2 14oz. cans artichoke hearts, drained and quartered
2 pints red and/or yellow cherry tomatoes, halved
1/2 green pepper, cut in thin strips
1 small red onion, thinly sliced
1 clove garlic, minced
3/4 cup Annie's Balsamic Vinegar Dressing
1-1/2 tsp. dijon mustard
1 tsp. lemon thyme leaves (optional)
1/4 tsp. salt
1/4 tsp. black pepper
1. In a bowl, toss together artichoke hearts, tomatoes, green pepper, and onion.
2. Whisk remaining ingredients together until well blended.
3. Add to artichoke mixture. Toss until coated, serve and enjoy!
