BLACK BEAN & CORN SALAD
1/4 cup red onion, chopped small
1/4 cup red bell pepper, minced
1/4 cup green bell pepper, minced
1/4 cup tomatoes, freshly diced
1 tsp. jalapeño peppers, minced
2 cups canned, frozen or fresh corn kernels
3 15oz. cans black beans, drained and rinsed
1/2 cup Consorzio Roasted Pepper Oil
3 Tbsp. freshly squeezed lime juice
2 Tbsp. sour cream (optional)
1 fresh avocado, sliced (optional)
Salt and freshly ground pepper (to taste)
1. In a large bowl, mix all ingredients together. Add salt and freshly ground pepper to taste.
2. Garnish with avocado slices and sour cream.
3. Serve and enjoy!
