ANNIE'S LEMON & CHIVE TUNA SALAD
12 oz can dolphin-safe Albacore tuna in water, drained
2/3 cup celery, diced fine
1 bunch scallions, whites and greens, sliced thin
¼ lb snow peas, blanched and drained, cut diagonally in thirds
½-1 tsp freshly ground black pepper
1 tbsp chopped chives
½ cup Annie’s Naturals Lemon & Chive Dressing
1. Blanch snow peas in 2 cups boiling water; drain mmediately and put under cold running water to stop cooking. Drain again, cut in thirds, and set aside.
2. Combine tuna and all other ingredients with Annie's Naturals Lemon & Chive Dressing.
3. Season to taste with salt and pepper, and garnish with snow peas.
4. Serve on bed of Bibb or butter lettuce.
